Cauliflower Mac ‘N’ Cheese
Did you know that cauliflower is be used to make so many different things now? Mac ‘N’ Cheese is one or even rice. It is so tasty! This dish makes 8 servings. I use all organic as it is the best and healthiest for you.
One 16-ounce package sprouted whole wheat or spelt pasta noodles (I used organic whole wheat pasta)
1 head cauliflower, chopped
2 tablespoons butter
12 ounces goat’s milk cheddar cheese, shredded
Sea salt and ground black pepper to taste
1/8 teaspoon nutmeg
Cook the pasta according to the package directions.
While the pasta is cooking, steam the cauliflower in a large pot filled with 1 to 2 cups of water.
Grate the cauliflower using a hand grater or pulse in a food processor.
Combine the cauliflower and the pasta. Mix in the butter, cheese, and seasonings.
